Volcano Pancake

Last week Cheri and I were chatting and she was recounting how she made a puffy eggy concoction for the boys she nannies. It reminded me of a recipe I have for Volcano Pancake and so this Sunday morning I made it. I recall that my children enjoyed it very much.



Volcano Pancake

6 eggs
1 cup milk
1 cup flour
1/2 teaspoon salt
1/2 cup butter

Heat oven to 400 degrees.
Beat eggs, add milk, flour and salt. Whisk until smooth.
Melt butter in microwave and pour in a 10X13 pan.
Put egg mixture in pan.
Bake for 30-35 minutes.
Serve with cheese or syrup.
